摘要】蔗糖是人类基本的粮食之一,跟据纯度的高低可分为三种,即白糖、砂糖和片糖.蔗糖是光合作用的主要产物,广泛分布于植物体内,蔗糖在甜菜和甘蔗中含量最丰富,平时使用的白糖、红糖都是蔗糖.蔗糖的分子式:C12H22O11,蔗糖是有机化合物,白色晶体,具有旋光性.蔗糖是一种非还原性二糖,就没变旋光现象,也不能形成糖脎,不能被氧化剂氧化.蔗糖容易被酸水解,水解后产生等量的D-葡萄糖和D-果糖.发酵形成焦糖,可以作酱油等的增色剂.
