Application in maltose syrup production
The hydrolysis of dextrins was carried out with -amylase from barley. Two pullulanase dosages were used: 1.42 and 0.36 U/g-dextrins.When dextrins were only hydrolyzed by -amylase, the reducing sugars concentration at 22.5 h of saccharification time was 172 g/l. If the pullulanase is used before the saccharification step by -amylase,
higher reducing sugars levels can be obtained.With 1.42 U/g-dextrins, at 22.5 h of saccharification time, the concentration of reducing sugars was increased of 14% and with 0.36 U/g-dextrins the increase was of 6.5% 。
These results are dued to the mode of action of the -amylase. Indeed the -amylase can neither hydrolyze the -1,6 glucosidic linkages nor bypass these linkages. This leads to an accumulation of high DP material referred to as -limit dextrins, residues
containing -1,6 glucosidic branch points.
